White and Green Pizza

A healthy family is a happy family. Try crumbled feta instead of mozzarella for a tangier flavor.


Here's what you'll need:


Let's get started: Heat oven to 450 degrees. Put spinach in a microwave-proof casserole dish. Season to taste, and sprinkle with water. Cover with plastic wrap, and pierce to vent. Cook on high for two minutes. Drain cooked spinach well. Mix ricotta and garlic powder in a small bowl. Place the pizza crusts on an ungreased baking sheet. Spread half the ricotta mixture on each pizza crust. Top each pizza with cooked spinach, mozzarella, and parmesan. Drizzle with olive oil. Bake for 10 minutes, or until the cheese is melted. Cool slightly and cut each pizza in half to serve.


How kids can help: Sprinkle water on spinach; mix ricotta and garlic powder; put topping on the pizza.

Watermelon and Arugula Salad

This refreshing salad makes a delicious first course or side dish for warm-weather meals. You can make it up to a day ahead, but add the arugula just before serving for best texture. If you'd like to save time by buying pre-cut watermelon, you'll need about 2 pounds of chunks to equal 6 cups diced.


Here's what you'll need:


In a large bowl, combine watermelon, onion, feta and sunflower seeds. Drizzle with dressing and toss to coat. Add arugula and toss again. Sprinkle with pepper and serve.

Cinnamon Apple Ice-cream

Here's a not-too-sweet and very fitting complement to Flat Apple Pie, Apple Almond Crisp or most any apple cake or dessert. Freshly ground cinnamon really ups the flavor profile (use a coffee grinder or mortar and pestle to grind the cinnamon stick), but pre-ground cinnamon will also do the trick. Be sure the canister of your ice-cream making machine is fully frozen before churning the mixture.


Here's what you'll need:


Prepare/freeze the insert of a large-capacity electric ice cream maker according to manufacturer's instructions. Combine all ingredients, stir until smooth, and then chill thoroughly. Follow the manufacturer's directions to churn the mixture. It will reach the soft-serve stage in about 20 minutes. For a firmer ice-cream, transfer the soft-serve mixture to a plastic container, cover, and freeze it for 4-8 hours, or overnight.
